Mediterranean Quinoa Salad for Better Bones

This mediterranean style salad is packed with bone building nutrition.
The bone broth provides glucosamine, chondroitin, and bone building amino acids.The avocado has valuable minerals such as potassium and magnesium. The feta cheese is chock full of fat soluble vitamins A, D, and K. Organic olives contain calcium and healthy monounsaturated fats.



Salad Ingredients:

1 cup organic sprouted quinoa, rinsed
1 1/2 organic bone broth
1 cup organic cherry tomatoes, sliced in half
1 cup chopped organic cucumber
1/4 cup diced organic red onion
1/2 chopped organic avocado
1/4 cup organic feta, crumbled
2 cups organic Kalamata olives

Dressing Ingredients:

Juice of one organic lemon
3 tablespoons organic extra virgin olive oil
1/2 teaspoon organic oregano
1 clove organic garlic, minced
salt and pepper to taste


  1. In a pot, combine bone broth and quinoa and bring to a boil.
  2. Cover and reduce to a simmer for about 15-20 minutes.
  3. Once the liquid has been absorbed, remove from heat and set aside, covered, to cool.
  4. Prepare the dressing by mixing the lemon juice, oil, oregano, garlic, salt and pepper in a small bowl.
  5. Mix the cooled quinoa, tomatoes, cucumber, red onion, avocado, feta and olives and toss in the dressing.
