Autumn Arugula Fig Salad

Autumn is here once again! 

This seasonally inspired salad is loaded with ingredients to support optimal bone health. It is easy to make and absolutely delicious!

Greens like arugula and spinach contain considerable levels of vitamin K2. This vitamin is crucial for the maintenance of strong and healthy bones.

Figs provide a variety of minerals that act as the building blocks of bone.

Raw goat cheese is an excellent source of calcium and fat soluble vitamins. Cheese contains these nutrients in their most bioavailable forms.

Pomegranate is rich in coveted anti-oxidants which protect against free-radicals and prevent the degradation of bone and connective tissue.

INGREDIENTS

For the salad:
4 cups organic baby arugula
4 cups organic spinach
8 fresh organic figs, quartered
1/4 cup organic raw goat cheese
1/4 cup organic pomegranate

For the dressing:
1/4 cup organic balsamic vinegar
1/4 cup organic extra virgin olive oil
Dash sea salt
Pinch Black Pepper

DIRECTIONS

  1. Combine dressing ingredients in jar and shake vigorously.
  2.  Arrange arugula and spinach in a salad bowl.
  3. Add quartered figs, pomegranate, and goat cheese to the salad bowl.
  4. Pour dressing on top of salad.
  5. Lightly toss salad.
  6. Serve.
